Deba-"Old & New"
A Japanese-inspired Deba with a wide, lightweight blade designed for controlled, precise kitchen work. Its compact profile makes it well suited to detailed preparation, offering the control of a smaller knife with the added versatility of a wider blade for scooping, transferring and handling ingredients.
The blade is made from AEB-L stainless steel, chosen for its excellent cutting performance, fine edge and ease of maintenance. Its light construction keeps the knife agile and comfortable to use, making it a practical choice for everyday preparation where precision and control are key.
The handle brings together two very different points in time. A stabilised burr oak bolster, with its distinctive grain, meets a handle made from bog oak preserved for around 5,000 years. The contrast between the two woods gives the knife its name, Old & New, pairing the character of ancient timber with the precision of modern steel.
The result is a functional kitchen tool with a distinctive material story, combining traditional Japanese-inspired design with carefully selected materials and a contemporary approach to knife making.
