Petty Knife- "Ko-Santoku"
A compact, versatile kitchen knife with the proportions of a petty and the wider profile of a mini santoku. The broad blade provides plenty of room for chopping, slicing and general kitchen preparation, while its smaller size keeps it light, agile and easy to control. A practical choice for everyday prep, it offers many of the benefits of a larger kitchen knife in a more compact form.
The blade is made from AEB-L stainless steel, selected for its excellent cutting performance, fine edge and ease of maintenance. Its wider profile makes it particularly useful for chopping vegetables, slicing ingredients and transferring prepared food from board to pan.
The full-tang handle features a carefully assembled combination of stabilised woods, each bringing its own character to the design. A figured elm burr bolster transitions into a Stikka spruce pine handle, finished with a burr oak end cap. The contrasting materials create a distinctive stacked appearance, giving the knife a strong visual identity without compromising its practical purpose.
Combining a broad, functional blade with a handle built around natural grain and contrasting textures, this mini santoku is designed to be a dependable everyday kitchen tool with a character all of its own.
